A course featuring seasonal Western-style appetizers and a sea bream-style risotto made with grilled Kyoto pork fumet de poisson.
Seasonal Kyoto ingredients and Japanese aromas such as sansho pepper, shichimi pepper, and wasabi are used to create Western-style dishes. Modern Japanese-Western fusion cuisine served in Kyoto-style tableware.
