By adding ginjo sake to the steaming water and slowly heating it, the meat becomes tender while being enveloped in the aroma of sake. Next, we steam tofu dishes and vegetables that are carefully prepared using seasonal ingredients. This dish is a concentrated version of the delicious flavor of the ingredients.For meat, we offer "Japanese Black Beef" and "Kyoto Pork"! The film that forms on the surface of soy milk is [raw yuba]. You can enjoy different textures depending on when you pull it out. We have prepared a fu kaiseki course meal using tofu from Kyoto Tofu Fujino and Kyoto fu from Hanbeifu, a long-established restaurant in Gojo, Kyoto. We hope you enjoy eating a variety of fu. This is a simple kaiseki course meal that can be served two or three times and is recommended for small gatherings (menu must be reserved the day before).
