The film that forms on the surface of soy milk is called "nama yuba." You can enjoy different textures depending on when you remove it.
Enjoy the smooth texture and delicate, refined flavor derived from soybeans.
First, enjoy the original flavor of the yuba as is, then add dashi soy sauce or special bean paste.
You can choose your main dish depending on the course.

"Hakkakuan's Ginjo Steamed Basket Course" includes two hours of all-you-can-drink.
Hakkakuan's Ginjo Steamed Basket Course, which slowly steams the ingredients to bring out their umami, is a luxurious two-tiered steamed dish consisting of a meat and vegetable portion. Available for two or more people. (The photo shows a four-person portion.)

"Ginjo Seiro-mushi Kaiseki" - Savor the natural flavor of the ingredients
We add ginjo sake to the steaming water and slowly heat it, wrapping the meat in the aroma of sake and tenderizing it until it's tender. Next, we steam a tofu dish and vegetables carefully prepared with seasonal ingredients. This dish is packed with the umami of the ingredients.
We offer both Japanese Black Wagyu beef and Kyoto pork! If you can't decide which one to order, we can also provide both!
Due to service constraints, this main dish is generally shared among guests.
*All-you-can-drink is available for an additional 1,800 yen (tax included) per person if you book by 9 PM the day before.
Perfect for lunch gatherings ♪ Autumn limited "Autumn Flavor Mini Kaiseki"
This mini-kaiseki course is only available during the day and includes freshly made Oboro Tofu, a colorful Obanzai (side dish) based on one soup and three side dishes, soy milk tofu, and yuba dashi ochazuke (tea rice with dashi). Serving time: 90 minutes
Lunchtime Mini Kaiseki Course: Enjoy Kyoto Tofu and Kyoto Namafu (Food with Wheat Flour)
We've prepared a fu kaiseki dinner featuring tofu from Kyoto Tofu Fujino and Kyoto fu from Hanbeifu, a long-established restaurant in Gojo, Kyoto. We hope you enjoy sampling a variety of fu. This is a simple kaiseki dinner perfect for small gatherings, with two or three servings (reservations required the day before).
"Kinshu" is a meal that allows you to enjoy autumn soup and eight side dishes.
Our most popular lunch menu includes freshly made Oboro Tofu (unlimited refills). Based on traditional Japanese cuisine, "One soup and three side dishes," Hakkakuan adds a touch of color to our "Obanzai" dishes, featuring tofu, yuba, and seasonal ingredients.
