Fragrant Kuzuryu maitake mushrooms and beef tendons are prepared in a salted kinpira style. A fluffy, flavorful rolled omelet is also included.

This dish features fatty Spanish mackerel, in season, combined with the sweetness of aged Awaji onions and the refreshing aroma of myoga miso, then grilled to perfection.
