The large temperature difference between day and night, mineral-rich water, and fertile clay soil of Oku-Noto are the source of the rice's "umami" flavor. Rice that meets the standards for specially cultivated rice is kept of high quality as "Terraced Rice Koshihikari" of Kouki Oku-Noto.
