The main course is roast beef made from lean meat from Shimanto Beef, a rare Wagyu beef raised on special feed made from beer yeast, followed by an appetizer platter featuring early summer ingredients, and for the final course, risotto made with clam rice cooked in a clay pot and served with cheese and consommé broth.
