Ohama soybeans and local tofu from Suzu City, Ishikawa Prefecture

Noroshi Town is located at the farthest edge of the Noto Peninsula.
The combination of Ohama soybeans, a gift from the satoyama, and natural bittern, produced in the satoumi's agehama-style salt fields, gave birth to Noroshi's local tofu.
Please enjoy this tofu, which captures the natural aroma and flavor of soybeans.

We are pleased to announce that Hibiki has significantly revamped its grand menu starting in April.
While maintaining our commitment to high-quality ingredients and our signature "Koshihikari rice cooked in a stone pot" (cooked for 40 minutes), we are now offering limited-time plans incorporating new exquisite dishes crafted by Hibiki's skilled artisans.
Please enjoy our new Japanese cuisine, which expresses the "Wa" (harmony) of Asia.
